Displays a rich, deep ruby hue. Luscious notes of ripe plum, intertwined with the rustic charm of bramble and delicate hints of violets. On the palate, black currant, and black cherry dances gracefully, accented by subtle bramble. The structure is defined by firm, yet refined tannin, with the oak nuances contributing complexity.
60% of the grapes are from Valley from 7-year-old vines in the Upper Devon, planted in iron-rich soil, as well as a well-decomposed shale, with 15-20% clay content, thus excellent water holding capacity. The vineyard blocks are planted in a N/E to S/W row-direction, utilizing the contours. 40% of the grapes are from 18-year-old vines, 320 m above sea level, in the Banhoek Valley, right up against the Simonsberg mountain, planted on a mixture of Hutton and Oakleaf soil on a southernly slope. These two vineyard sites complement each other well.
The grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28°C. Sufficient colour and tannin structure were extracted with regular and controlled pump overs. After extended maceration, the skins were gently pressed, and malolactic conversion was completed in tank and barrels. Maturation for 12 months in 100% French oak barrels, of which 80% second fill and 20% third fill.
