A classic expression of Stellenbosch Cabernet Sauvignon with a fine balance of power and finesse. The wine displays a deep ruby hue. A beautiful expression of bramble berry and blackberry compote with infused graphite. Velvety smooth tannins with perfectly judged use of oak that respects the fruit.
A selection of two magnificent vineyard sites in Stellenbosch. The one at the upper end of Devon Valley with its decomposed shale soil, containing 15-20% clay, lends itself intrinsically to Cabernet Sauvignon, adding bold and black fruit to the wine. The second vineyard, situated in the heart of Stellenbosch, with its weathered granite soil adds finesse and flair to the wine.
The grapes were crushed, destemmed and cold soaked for two days prior to inoculation. Fermentation peaked at 28°C. Sufficient colour and tannin structure were extracted with regular and controlled pump overs. After extended maceration, the skins were gently pressed, and malolactic conversion was completed in tank and barrels. Barrel maturation for 14 months in 100% French oak, of which 44% first fill and 56% second fill.
