TASTING NOTES

A symphony of tropical sensations envelops your palate, as the vivacious notes of kiwi and gooseberries intertwine with the tantalizing crispness of Granny Smith apple. Beneath the surface, undertones of honeydew melon adds a layer of complexity, weaving together the spectrum of flavours into a harmonious melody. The wine's beauty lies in its artful equilibrium, where the well-balanced acidity strikes a perfect chord.

 

VINEYARDS

Three beautiful vineyard sites are selected for The Pledge Our Origin. Darling: 23-Year-Old Bush vine with an East-west row direction with well drained sandy loam soil situated on a South-westerly slope. This cool-climate helps retain acidity and contribute to the fresh flavours. Durbanville: The vineyard is planted in loam soils on a Southerly slope, with an East-west row direction. The cool ocean breeze and elevation of 290m infuse the grapes with a distinctive, crisp character. Stellenbosch: Two selected blocks on the foothills of the magnificent Helderberg was planted in 2007 and 2008 in Oakleaf soils with a North-East row direction. The altitude ranges from 240m to 316m, resulting in multiple layers throughout the fruit profile.

 

WINEMAKING

A combination of overnight, versus, 1 to 3 hours on the skins for optimum fruit extraction. After the juice settled clear for two days, we inoculate with a selected yeast strain. Each batch are vinified separately and fermented in stainless steel tanks at 12°C-15°C. Thereafter, the wine is kept on the lees as long as possible. It is then blended to showcase a seamlessly integrated expression of the Coastal region.
