This is an expressive Sauvignon Blanc with a light-straw colour. On the nose there is vibrant notes of sweet melon, gooseberries, and delectable tropical fruit. On the palate the refreshing natural acidity creates a balanced and pleasant mouthfeel combined with a lingering finish.
The grapes were picked from bush vines as well as manicured 5 to 6 wire VSP-trellising. Most of the vines are 9 years old, situated 230 meters above sea level and planted in a combination of Hutton (with higher clay) and Oakleaf (a sandy loam) soils. Both are high potential soils with good water holding capacity. The different clones, sites, soil types and elevation, allows us to work with various fruit in the cellar to present the best of the Coastal region.
Handpicked, cool-morning grapes were used for a combination of overnight skin contact versus 3 hours skin contact for a balance between fruit extraction and obtaining natural acidity. Lower juice recovery was obtained during the pressing cycle to extract the finest grape essence. After the juice settled for two days, we inoculated with a selected yeast strain. Fermentation took place in stainless steel tanks at 12-15°C. After fermentation the wine was kept on the lees as long as possible with occasional lees stirring to enhance the mouthfeel of the wine.
