The initial impression on the palate is of sweet plums and ripe mulberries, which create a delightful fruit-forward profile. These primary notes are complemented by the presence of perfumed oak, adding an alluring layer of complexity to the wine. The tannins are seamlessly integrated. The wine gradually inveils a medley of both dark and red fruit flavours, forming a harmoniuous blend that lingers on the palate.
Only the best Pinotage fruit were selected from bush vines in Agter-Paarl. The 10-year-old bush vine block is planted on weathered shale soil that added perfume notes to the wine. Only one bunch per shoot was kept to obtain concertation of fruit and colour. Optimum grape ripeness was achieved which is of the utmost importance to reflect the true beauty of this versatile grape variety. Picking was between 25-26°B.
Hand harvested at optimal ripeness. 10% of juice were drawn off at crushing to intensify structure. Two days of cold soaking before inoculation. 4 days of fermentation on the skins with regular punch downs. The fermentation temperature peaked at 26°C. Pressed at 3°B and take to a combination of 225L and 300L older French oak barrels where the wine matured for 12 months before bottling.
