An alluring nose of sweet plums and mulberry notes, complemented by perfumed oak and nuances of cinnamon spice. Seamless tannins sculpt a lingering palate filled with a tapestry of dark fruit delicacies.
Only the best Pinotage fruit were selected from bush vines in Agter-Paarl. The 10-year-old bush vine block is planted on weathered shale soil that added perfume notes to the wine. Only one bunch per shoot was kept to obtain concertation of fruit and colour. Optimum grape ripeness was achieved which is of the utmost importance to reflect the true beauty of this versatile grape variety. Picking was between 25-26°B.
Hand harvested at optimal ripeness. Crushing and destemming into open-top fermenters. 30% of the juice were drawn off at crushing to intensify the wine structure. Two days cold soaking before inoculation. Combination of manual punch downs and pump overs every 2-4 hours. Fermentation temperature peaked at 26°C. Pressed at 3°B and taken to a combination of first, second and third fill 100% French oak barrels where malolactic conversion took place and wine was matured for 16 months before bottling.
