This Darling Sauvignon Blanc has a light-straw colour with a seductive green tint. The nose and palate are entertained with
expressive notes of green melon, fragrant lemongrass, and hints of white pears. The integrated natural acidity creates a balance, sculpting the palate with a pleasant mouth filling texture
The grapes were picked from one site in Darling. The block is dived in a bottom, middle and top section. All three sections has individual Sauvignon blanc characteristics, and we do not pick everything at once. We picked two sections 5 days later than the rest, capturing the richness and greenness that Darling fruit offers. The flavours of the 23-year-old bush vine berries are so concentrated. The vines are planted on a southwest facing slope on a mixture of decomposed granite and loamy soils.
The grapes were picked in bins during cool early morning. Two to three hours skin contact were given to extract maximum fruit while
still obtaining the natural acidity. To ensure only the purest of juice is extracted, a delicate pressing cycle is used resulting in a lower juice recovery. After the juice settled clear for two days, we inoculated the juice with a selected yeast strain. Fermentation occurred in stainless steel tanks at 13°C. After fermentation, the wine was kept on the fine lees as long as possible. Regular stirring of the lees allows for an enhanced and fuller mouthfeel.
