This light-straw colour Chardonnay boasts a tantalizing bouquet of white pear, ripe peaches, citrus orchard, and vanilla, creating an enticing sensory experience. On the palate, it reveals a perfect balance with a touch of brioche, caramel, and roasted almond, showcasing the seamless integration of oak and fruit elements. The wine concludes with a satisfying finish that harmonizes bright citrus notes with creamy, nutty undertones, leaving a lasting impression of elegance and complexity.
The vineyard is situated at the upper end of Devon Valley. The soil is dark red, and rich in iron. This well decomposed shale has 15-20% clay content. It has an excellent water holding capacity and only supplementary irrigation is required. During harvest time, meticulous tasting of fruit determines the picking time. Grapes were picked on the 22nd of February 2022 at 22.9°B.
All the grapes were handpicked. After two days of settling, fermentation started in stainless-steel tanks at 15-17°C with selected yeast strains. Halfway through fermentation it was taken to a combination of 300L and 400L French oak barrels. No malolactic conversion to preserve the freshness of the wine. The wine matured for 13 months in first fill, 100% French oak barrels with a blonde to medium-light toasting (94%), as well as in a 500L amphora (6%).
