This dark-red Rhone blend harmonizes Shiraz, Grenache and Mourvèdré, creating an inviting fusion of spicy notes, vanilla, and maraschino cherries with subtle hints of liquorice. The palate delivers a medley of raspberry, black forest cake and vanilla spice. Balanced by fine-grain tannins and vibrant acidity.
Grapes from the Swartland with the vineyards situated on well-drained slopes of Piketberg. Cold, wet winters and sunny summers ensured the fruit to ripen to full phenolic ripeness, ensuring precise varietal expression of each grape variety.
The grapes were crushed and destemmed. Two days cold soak before fermentation started with a non-Saccharomyces yeast strain and halfway through inoculated with a selected Saccharomyces yeast strain. Pump overs three times daily. Fermentation peaked at 28°C. The Mourvèdré and Grenache were pressed once fermented dry, and the Shiraz had a 5-day skin maceration. The components matured separated in barrel for 6 months before blended, and then matured for another 8 months in barrel. In total the wine was in barrel for 14 months: 90% French oak and 10% American oak, 15% first fill, 25% second fill, and the rest older barrels.
