An expressive Sauvignon Blanc with a light straw colour. This modern Stellenbosch Sauvignon Blanc with riper fruit nuances, creates a pleasant mouth filling texture. Upfront tropical fruit flavours are complimented by nuances of gooseberries and figs. A well balanced natural acidity brings a lingering finish.
Two selected blocks on the foothills of the magnificent Helderberg, produces fruit with multiple layers. The blocks were planted in 2007 and 2008 on Oakleaf soils in a North-East direction. The one block’s highest point in altitude is 316m versus 240m of the other. A distinct difference in the fruit profile is noticed as you move from the lower to the highest point in altitude. Selected parcels within these two blocks were identified to capture the true essence of Stellenbosch Sauvignon Blanc. Refreshing cool sea breezes from the afternoon brings relieve on a hot summer day.
The grapes are handpicked in bins during cool early mornings. Three-hour skin contact for optimum fruit extraction, still obtaining the natural acidity. Lower juice recovery at the press for extracting the finest essence of the grape. After the juice settled clear for two days, we inoculate with a selected yeast strain. Fermentation in stainless steel tanks at 12°C-15°C. After fermentation, the wine is kept on the lees as long as possible and with regular stirring it enhances the mouthfeel.
