This Rosé displays a pale rose gold colour. A seductive bouquet of strawberries, watermelon, raspberry coulis, and crushed pomegranate. The palate is dry with a well-balanced acidity, due to the viscosity of the Clairette Blanche. A lingering finish of delectable red berries.
Each block was harvested at optimum phenolic ripeness to express fruit and terroir. Harmony was created between the fruit and acidity of the 22-yr-old Shiraz vineyard (planted on well-drained decomposed granite soil in the Klapmuts Kop mountain, on an easterly slope, facing Stellenbosch) and 17-yr-old Clairette Blanche vineyard (planted in sandy gravel soil in the Polkadraai Hills, close to Stellenbosch where leaf removal in the bunch zone is very important to ensure light penetration and sun exposure).
A clean, minimalistic winemaking approach was followed in the cellar, with more reductive winemaking principles to preserve the fruity characters. The Shiraz and the Clairette blanche ferments separately. Smooth fermentation in stainless steel tanks at 13°C. The Shiraz attributes to multiple fruit layers and the Clairette blanche to a velvety viscosity.
